Valentine’s Day Chex Mix

Valentine’s Day is around the corner, and what could be more fun than whipping up a sweet treat for your sweetheart and your littles?  Normally my go to for baking is cookies, but with Christmas having just passed, I’m all cookied out!  So what could be more perfect than this Valentine’s Day Chex Mix?

My sweetheart assistants!

This was so easy that my toddlers were able to pitch in and help.  And it was quick too, meaning that they didn’t lose patience and it was fun for everyone!

Of course, all add ins are merely a suggestion.  Feel free to personalize this to your family’s taste!

Valentine’s Day Chex Mix

  • 2-3 cups of Chex Rice Cereal
  • 1 cup of pretzels
  • 1 bag of M&M’s (we used peanut butter)
  • 1 cup of white chocolate chips
  • 1 cup of unsweetened coconut flakes
  • 1 stick (1/2 cup) of butter
  • 1 tablespoon of brown sugar
  • 1 tablespoon of vanilla
  • Cinnamon sugar mixture to taste (available on baking aisle at grocery stores)

Grab a skillet and pour in the Chex.  Turn heat on low and stir around until lightly toasted.

Melt butter in small saucepan.  Stir in brown sugar, vanilla and cinnamon sugar mixture.

Put toasted Chex and pretzels into bowl.  Pour butter and sugar mixture over the cereal and pretzels.

Mix in M&M’s, white chocolate chips and coconut flakes.  Taste.  Add more cinnamon sugar mixture if needed.

Our yummy Valentine’s Day Chex Mix!

Set out in pretty bowl and enjoy!

As I said, feel free to personalize this to your family’s taste.  As I’m typing this, I’m now wishing that I had toasted the coconut flakes as well.  *SIGH.*  Oh well, next time!
