Pi Day Pizza

It’s 3/14 so in honor of National Pi Day, many are celebrating by baking delicious classics, such as apple pie.  Unfortunately, we’re not big pie people in my home, so we decided to get a bit creative and bake a pizza pie!

I started off by making my own crust, but store bought works just as well if that’s what you have handy!

Combine 1 tsp. of active dry yeast with 3/4 or a cup or warm water.  Let it stand for 10 minutes.

In a bowl, mix 2 cups of all purpose flour with 3/4 tsp. of salt (I use Kosher) and and three table spoons of extra virgin olive oil.  Add in water and yeast.

Transfer dough into a lightly oiled bowl.

Cover with a kitchen towel and allow to rise for at least one hour.

After dough has risen, preheat oven to 400 degrees (F).

Roll out dough to desired size, and if you’re feeling brave, let your toddler help!

Top with sauce, cheese and desired toppings.  The one for my toddler is cheese and pepperoni.  Mine has mushrooms and caramelized onion, yum!

Bake for 15 minutes.  Allow it to cool a bit before giving it to your child.  Enjoy!
